Patisserie business
Engaged by a struggling patissierre with limited data available, we started by examining the fundamentals- process times. In identifying the most and least profitable products, it turned out the primary seller was in fact, a loss-maker. Technical solutions were explored and priced to create profitability, and target metrics identified across the business to remove any liabilities in their kitchen, or on their menu.
